Chef Tung Phan's Euro-Vietnamese gem was recognized as the Critic's Pick for Best New Restaurant in 2022. Back then, Camille was still a pop-up, gestating in Domu Lab's East End Market incubator hub.
Since flying the nest to set up shop in Baldwin Park, the team's copious hospitality skills have earned nods from the Michelin inspectors' team for its elegant plates that meld French techniques with Vietnamese flavors.
In the span of a little more than two years, chef Tung Phan has taken his French-Vietnamese concept from residency pop-up at East End Market to its very own permanent (and strikingly handsome) house of fine dining in Baldwin Park.
No question Camille, named after Phan's first-born daughter, is the sort of restaurant that's been intentionally and systematically designed, planned and curated to attract the sparkle of Michelin stars and James Beard Awards.
Chef Tung Phan’s creative and unconventional spins on Vietnamese dishes, all punctuated with classical French flourishes like espuma of pho, papaya with salmon and nước chấm and Vietnamese coffee-crusted Wagyu with potato pâvé are now presented in a gorgeous, 2,500-square-foot, 30-seat space with all the soothing spa feels.
Last year’s Best New Restaurant is this year’s Best Vietnamese — though it’s not precisely traditional. Chef Tung Phan’s gorgeous brand of Vietnamese fine dining, often transformed through a European lens, has been selling out the seats at DomuLab since it opened, but will soon have its very own Baldwin Park boite.

Camille’s Vietnamese Braised Short Rib ramen trailing close behind and Hawkers Asian Street Food’s Duck Duck Goose ramen (best name of the night!) at No. 3. The two runners-up were literally within votes of one another.
Jason Chin of the Good Salt Restaurant Group, who organized the event along with Morimoto Asia, was not only proud to have a Good Salt venue take the belt, but moreover the record-breaking haul for Give Kids the World: more than $11,000.
Since taking up residency at the Neighbors in East End Market as part of Domu Lab's chef incubator program, Camille — chef Tung Phan's modern Vietnamese tasting-menu-only concept — has wowed the city's gastro-cognoscente with impeccably crafted dishes.
But the goal has always been to find a permanent home for the concept and, come this fall, Camille will do just that when it moves about a mile away into the Ocean Poke space in Baldwin Park.
